Cut a few courgettes into thing slices. Coat with flour (a little s&p in the flour is good). Fry for around 3 minutes a side in olive oil. Serve with tsatsiki. Simple, tasty, cheap, healthy, quick, and veggie (if that's your thing). Steve W |

mm...i'll see your fried courgettes, and i'll raise you.. Giant Stuffed Mushrooms * large mushrooms * 1 tbsp olive oil * 1 small red onion * fresh wholemeal breadcrumbs * sweetcorn * black pepper * pinch of salt * fresh parsley * red leicester cheese 1. Wash the mushrooms clean then remove the stems. 2. Simmer the mushrooms in the olive oil. 3. Once tender, remove from heat. 4. Mix the breadcrumbs, some red onion, sweetcorn, freshly ground black pepper and a pinch of salt. 4. Place the mushroom caps in a shallow oven dish and pile the filling into them. Dot them with a little oil and cover them over with the red leicster cheese. 5. Bake at Gas Mark 5 for 20 minutes and garnish with fresh parsley. Serve hot. |
